Carnivore Bodybuilder is European Pro Champion! Learn His Secret!

Richard Smith, host of the Aikido Pro podcast and former professional bodybuilder, shares his remarkable health transformation journey from clinically obese type 2 diabetic to European Champion athlete. Smith details how removing bread and grains led to a 107-pound weight loss and complete reversal of diabetes, migraines, anxiety, and depression within 12 months. His story demonstrates the power of ketogenic and carnivore diets in overcoming genetic predisposition to obesity and metabolic disease.

The discussion explores the harmful effects of plant toxins and lectins found in commonly consumed "healthy" foods. Smith explains how broccoli creates sulforphane (a chemotherapy compound) when chewed, how turmeric activates oxidative stress pathways similar to lead and arsenic, and how spinach contains dangerous levels of oxalates that can cause kidney stones and thyroid dysfunction. These plant defense chemicals cause intestinal permeability, block nutrient absorption, and trigger autoimmune responses.

Dr. Anthony Chaffee and Smith examine the cholesterol myth, revealing how higher LDL levels are actually protective against cardiovascular disease, Alzheimer's, and stroke. They discuss how statins that cross the blood-brain barrier can cause reversible dementia by blocking the brain's cholesterol production. Real-world studies of 140,000 heart attack patients show no correlation between cholesterol levels and heart disease, contradicting decades of medical dogma.

The conversation concludes with the superiority of animal-based nutrition, explaining how meat provides all essential nutrients in bioavailable forms while plants require conversion processes that are often inefficient. Smith emphasizes that supplements cannot replace whole animal foods, as synthetic vitamins lack the cofactors needed for proper absorption and utilization in the human body.

Key Takeaways

  • Remove grains and seed oils as the first step toward metabolic health - these foods contain lectins that bind to insulin receptors and signal the body to store 5 times more fat than insulin alone
  • Sulforphane in broccoli is created only when the plant is under attack (chewing) and is the same chemotherapy compound used in cancer treatment - healthy plants shouldn't require consuming medicine daily
  • Spinach contains 750mg of oxalates per 100g, with 5,000mg being potentially lethal - a 200g serving provides nearly one-third of this toxic dose and contributes to 75% of kidney stones
  • Turmeric activates the Nrf2 oxidative stress pathway (same as lead, mercury, arsenic) and when combined with black pepper, blocks the liver's ability to detoxify these compounds
  • Higher LDL cholesterol protects against Alzheimer's, Parkinson's, stroke, and cardiovascular disease in people over 65 - the demographic most commonly prescribed statins
  • Type 2 diabetes develops over 10-15 years through insulin resistance before blood glucose elevates, but can be reversed in as little as 2 weeks with carbohydrate restriction
  • Animal proteins provide 100% bioavailable nutrition including all essential amino acids, B-vitamins, vitamin A (retinol), and minerals, while plant versions require inefficient conversion processes
  • Lectins from grains and nightshades cause intestinal permeability by releasing zonulin, which creates gaps between gut cells allowing undigested proteins into the bloodstream and triggering autoimmune responses

welcome to the plant free MD podcast with Dr Anthony chafee where we discuss diet and nutrition and how this affects health and chronic disease and show you how you can use this to optimize your health and happiness both mentally and physically all right hello everyone it's Dr Anthony chafee here again with another plant-free MD podcast here a very special guest Richard Smith who's from Aikido Pro podcast uh Richard how are you doing very well thanks Anthony nice to see you again it was only a couple of days ago we were chatting on on my show yeah and I think we said that um yeah it'll be good to catch up before that public health collaboration event next month and here we are three days later I believe is there yeah yeah that's it yeah so that's perfect yeah thank you for for having me on it was a pleasure and um yeah it'll be great thanks for coming yeah to see you over at the phc that'll be fun too so people don't know about that that's May 19th and 20th in Sheffield England that's the public health health collaboration or phc uh annual annual talk and so I'll be I'll be speaking there I'll be on a panel with Dr Sean Baker and others discussing uh probably a lot of the stuff we'll be discussing today of various uh merits and demerits of including plants in our diet and and there'll be a cancer panel as well for for uh kids yeah like metabolic therapies and things like that and other therapies for cancer so I'll be moderating that and so anyone who's available uh please do come by and uh see both myself and and Richard yeah sure looking forward to that it's uh exciting stuff it um I think this is the first one or at least the biggest one the first one that I've been to um and to see so many uh experts yourself included come in from all over the world to speak at the event this is something special super exciting so if you don't have your tickets book them now before it's too late but yeah come along see Anthony see myself and all the other speakers there uh yeah looking forward super excited yeah it's I've been active with the phc uh only within the last year um uh give or take but I have been implementing things um sort of outside of the phc you know before I came part of the phc um we hold lots of public speaking events we work with diabetes UK we work closely with local doctors and people from within the medical community we work with patients with or clients with type 2 diabetes um down to polycystic kidney disease and even cancers um so we do a lot of free speaking events one of which is every Thursday in the High Street shop that we have uh on Queen Street beneath um it's a free event and the idea is to educate at the local community in the means of real nutrition because um almost every Health the fact every illness that we know of metabolic illness comes from insulin resistance and inflammation these are two things that we can address incredibly quickly with with the correct diet so big education piece um I think you and I are probably what people would deem to be an extreme version of the lifestyle um I don't believe it that way I love the food the right I don't think it's extreme at all I can understand how other people would see it that way uh but it's almost a case of softly softly so with these we educate them week on week and we we ask them to make one change per week and these are changes that we can discuss if you like as we go on but it um these are all things that we would remove uh or changes that we would make either remove or implant um on a daily basis but for a lot of people it seems to be um incremental change is more achievable than step change so I I'm more of a step change person it needs to be black and white for me it needs to be All or Nothing um I can't have anything in between but for most these incremental changes seem to be better so week one for example um you know we ask them to remove grains um so grains high in lectins which we can go into but it um there are lots of other foods that contain lactins but grains as you know one of the most damaging form of lectins in in the form of regular gluten in um and week two we remove sea dolls and so on and so on so we make these incremental changes um but yeah that's a little bit about uh about what I do on on a daily basis um it's a passion I think and I think it's safe to say that that's the same with yourself uh it's something that has changed my life uh I'm not the same person that I used to be but the better I hope yeah um but yeah it living this way has transformed my life in in ways that you know you you yourself you can imagine because you see it every day but most people are guessing a lot of the other listeners uh and it almost seems like a miracle change I can tell you a little bit about my background if you like yeah please do um so I used to be type 2 diabetic I was clinically obese I suffered with daily debilitating migraines that would make me blind uh for which I was on three different medications for I suffered with severe acne anxiety depression arthritic pains um just to mention a few and in my mid to late 20s I could barely walk up the stairs without stopping or being severely out of breath um I thought this was natural I thought that this was down to age obviously I'd only be in 20 but you know in my in my Twenties that that's what I believed it to be you see these Elite athletes who retire in their 30s you you almost believe that um you know we become towards the top end of our peak in our late 20s early 30s um I don't believe this to be true at all anymore um super long story short uh I made changes to my diet uh I tried every diet and lifestyle that you can think of um yes ayet a lot of junk food I'm a food addict I love my food and I still do I still love my food I've just changed the food right I used to eat a lot of junk but I did go through spells where I would actively eat from the eatwell plate or the food pyramid um I add my whole grains I didn't cook my food in saturated fats um I avoided red meat I did everything that I was told to do and I became more unwell and I gained even more weight um I was plastered in acne all over my face all over my back suffered with this this chronic fatigue this lethargy um constantly tired I I never had energy to do anything but after trying everything that there was to try I decided to remove bread from my diet only bread uh because every time I consume bread I felt brought it I felt uncomfortable so in my head with my wisdom I thought if if I can remove bread and remove this bloat then it would at least give the impression that I wasn't so obese if I could make my chest appear to be bigger than my belly and this was the gore for me sort of in my you know uh early ad of life was um I wanted a bigger chest in my belly um because this would give the impression that I wasn't so obese so that was the first obviously I was I was training I was in the gym I was active I was trying everything to to combat this obesity um but nothing seemed to work but I removed bread and within um 28 days I'd lost 28 pounds um So within a month I dropped two stores just from Edinburgh I used to eat a lot of bread everything would would be bread orientated uh it was always cool cool grain or brown bread which is what we are told to consume um but I I would eat bread in some form with everything if it wasn't bread it would be cereals you know muesli um Shredded Wheat um whatever it was that I was told you know to to consume to be fit and healthy I removed all of these and I dropped two Stone incredibly quickly this blot went away I felt so much better my migraines had already started to improve um I was no longer getting them every day and I bumped into a friend of mine that I hadn't seen for a few months and he said to me that you must be in ketosis to which my instant reaction was don't swear on me because I never heard of the word ketosis because I did I didn't have a clue what he was talking about and this this was 10 plus years ago now um so I investigated a little bit further and I thought well I must be I'm restricting these foods to this degree that I must be ketogenic so I tested on the urine test strips and I was negative so I was not producing ketones and the reason being I was still consuming foods that I thought were healthier I was still consuming lots of fruit I was still consuming lots of veg um I was not ketogenic so I actively pursued this to try to become ketogenic in order to feel well the weight loss for no other reason um I believed this to be unhealthy for me but I didn't care because I just wanted to be I wanted to be happy with the way that I looked um my anxiety was so bad that quite often I could not leave my house if there was another person in the street if my neighbor was was in their Garden I would not be able to walk to my car which was two feet away on the drive I would not be able to leave my house if there was a car driving past and many would think that it was to do with me being unsociable um and that's not the case I almost felt Unworthy of the company of others so I lived in this world where I lived in a box and I would leave my box to jump into my metal box for drive to another box which was my works at the time I'd walk into this big box and I would live inside a box inside this bigger box so my whole world was was box orientated I would move from one box to another and be outside and amongst people for the least time possible um and again it was because I never felt worthy of the company of others um which is it's not a good place to be you know we're on the planet to live we're here to live our life were you to enjoy life and I was not enjoying life but I thought that if I could lose this weight that I would be happy um everything that I I Googled Mystic Mr Google um probably one of the worst things that we can uh we can do isn't it but um ketosis is bad for you uh it you know it was Raising questions around cholesterol and saturated fat ketoacidosis I went to my doctor and he told me not to pursue it um but I did anyway and I did did so through vanity purposes basically I wanted to look better I wanted to feel better so I persevered um and I restricted carbohydrates uh it took me further two weeks to become ketogenic because there are lots of carbohydrates that are found in foods that you would not think contain carbohydrates um these were the two worst weeks of my life I'm not I'm not gonna lie um I genuinely thought that I was going to die and I even said to my wife when I went to bed uh one might um look I I'm gonna bed I don't feel well um I genuinely I genuinely think I'm gonna die Sam can you can you come and check on me in 20 minutes um but this is how unhappy I was in life and I was willing to accept any risk in order to change uh my my life I went to bed um I didn't die obviously I know you're in front of you today uh I woke up feeling the best that I'd ever felt I don't know what happened throughout that night but some switch flicked I woke up feeling like a million dollars and I have never looked back since there were a few things that I didn't understand back then um the information available within the UK uh is not as abundant as it is in in the US for example and even then the information there was available I but I still believe a lot of it to be incorrect um one thing that we're told is to to watch our protein consumption and this is a big fallacy the protein should be prioritized not feared uh protein is the most important macronutrient um you know we are told to pursue excess fat consumption um it's not the fat that allows us to be ketogenic and this is how fasting works this is why being in a fasted state raises ketones we don't need dietary fat to be ketogenic that's not to say fat is not helpful uh fat is also essential for life but protein especially when consumed in complex and by complex I mean as nature intended an egg for example contains almost equal quantities of protein and fat steak almost equal quantities of protein in fat chicken breast with the skin non-protein in fat salmon protein fat all of these things that nature provides us provides us with this perfectly packaged present that gives us everything that we need not just to survive but Thrive so prioritize your protein but this was a mistake that I made early on another mistake that I made was avoiding sodium because this is another thing that we are told to avoid sodium we are told is detrimental to our health sodium is essential for life we cannot live without it um we need lots of sodium and we need considerably more than we're allowed to believe and there's a study that I highlight in the talks that I give which covers 17 countries over 100 000 participants and it measures sodium excretion and it shows that um if we go below 2 000 milligrams of sodium per day that all cause mortality increases massively um whereas the optimal area is somewhere between four to six thousand but then this is geared towards measuring excretion so if we assume uh what is excreted is at least what is consumed then we need to consume maybe closer to ten thousand milligrams um I'm certainly within that sort of area but this was the reason I wasn't well this was the reason that I struggled earlier on um and it was because I now know it to be keto flu or was once known as the Atkins flu um lack of sodium lack of knowledge um and these are the things that I teach now but uh I went back to my doctor my doctor said it's fantastic that you've uh so let me skip back apologies so 12 months on I'd lost 107 pound I'd reversed my diabetes um I was now migraine free medication free full of energy I was as depression and anxiety-free as one can be and I say that because I believe that these are almost a spectrum and I think if you if you settle with these I think maybe you know they're always there in the background but excuse me whereas they were all consuming previously whereas they took over my life um but now I have the ability to scramble them up into this little ball and almost put them behind you know behind my shoulder uh and forget that they're there and I can carry on through you know my daily routine and do things in life that others took for granted uh I would not go to a local shop or um Shopping Center um by myself at least I would not go to the supermarket um I don't go to the supermarket anymore I do all of my food shopping in the butcher because I have no Carnival but it um these things you know I would miss out on taking my daughter to functions and taking her places because I was always in fear of other people um and I was quite conscious early on that I didn't want my little girl to to feel this way because uh children are incredibly clever um the very intuitive and I think any sign of me giving out the impression that going out in public is a bad thing would rub off in a negative way for her I want her to enjoy life I want her not to suffer with the things that I have suffered from um so I'd I'd take her places but I would I would have to hide the way that I would feel but I think deep down she knew you know what was really going on but now I look forward to taking my daughter out I look forward to going places um these things are still there these you know little things of anxiety and I think you know we all suffer from spells of anxiety but living live in this life um living this lifestyle and changing the foods that I've consumed and probably more importantly removing certain foods for my diet has allowed me to do all of those things and off the back of that I lost a tump of weight I was now incredibly lean um but my doctor told me despite reversing my diabetes despite losing all this weight despite coming off my old medication and that I should walk away from the lifestyle because it is dangerous um I didn't understand this because when I was stuffing my face with fast food with Burger King and McDonald's KFC Pop Tarts nobody had one thing beside me the second that I start eating real food suddenly I'm going to die um now this didn't compute to me despite my doctor telling me my friends and family telling me especially in regards to cholesterol and the internet everything that you read on the internet tells you that this is an unhealthy lifestyle I refuse to believe this and in spite of of lack of of quality information I decided to pursue the lifestyle because I had never felt healthier I never felt better fitter so I decided to pursue it further um one of the the common myths that I um still get get thrown at me today is the car but you can't live without carbohydrates there's no such thing as an essential carbohydrate you do not need carbohydrates to live um but I was also told because I was I was still training in the gym I'd trained All My Life um but made very little progress um and I'd train on weightlifting and one of the things that the guys in the gym would say was that um uh you need carbohydrates to build muscle but I knew that I was building muscle yes I was incredibly lean but I could feel you know I I you know your own body I was building muscle um I could tell by the mirror so I decided to pursue this further and I ended an amateur men's physique bodybuilding competition um I told everybody that I was entering this competition and um I I hated my body so much that I trained at home in a home gym so with equipment that I purchased for the house uh I trained for a year but I told everybody that I was competing in this competition because I knew that I would not back out if I had told everyone that I was doing it because I would the second that I pulled out they would throw it back in my face so I told everybody that I could that I was entering this competition um my friends and family begged me not to do this competition because they knew how severe my anxiety was and they feared that I would not walk on stage or if I did I know I was going to fall over and that's almost exactly what happened on the day of the competition so I got there I got to this comp um I was the last to walk out on stage and I stopped just before the curding edge and my legs were shaking I forgot how to walk I forgot how to put one foot in front of the other and from the crowd I had a friend of mine called my name and cheer me on he was there to support me and I thought in that second I can't let him down I can't prove everyone else to be right so I walked out on stage I competed and I came second in this competition now suddenly all of these doubters who were telling me that I couldn't do it um were messaging me saying uh rich I knew you could do it you know I never doubted before a second no you didn't you were trying to put me into my place um and I think a lot of it is is jealousy as well because people can see that I was living this lifestyle and maintaining this lifestyle that you know other people were trying to lose weight and were unable to do so um off the back of this I decided to compete further I went back um are you a leader um and a year later again on the third year I believe I um I was awarded prostatus so I became a professional within my Federation um two years after that I went on to win the British championship and two years following that again I went on to become European Champion nice in a professional sport um from being clinically obese type 2 diabetic and unable to walk up my stairs from living this lifestyle from changing what I put into my mouth um I went on to become number one in Europe I am not genetically gifted uh I will send you image uh images of my father uh you can see this was where I was heading he died a few years ago of hard complications through obesity um I didn't know him very well uh despite not living too far away um he left when when I was three um we tried I tried to make contact several times but he wasn't interested so I didn't really know him um so no love lost there but it uh it's you can see in these images that this was where I was heading so I'm not genetically gifted my family are riddled with health issues and problems and my mid to late 20s I was probably the most unhealthiest out of my whole family but I beat my genetics I beat my genetics through something called epigenetics now we are given a set of genes but we can control these genes for epigenetics we can almost flick the switch to be from being unhealthy to being healthy and 85 of of this is controlled through diet and lifestyle and this is simply what I've done the people that I beat on stage they are way more genetically gifted than I am I just implemented a tool that they were not implementing I used the tool in my toolbox that they were not implementing had they lived the lifestyle of a doctor to keep the drug lifestyle there's no way that I would have beaten them um but being ketogenic allowed me to get a sub three percent body fat and give the impression that I was considered considerably bigger than I actually was so on stage I actually looked a lot bigger because my waist was so narrow compared to the delts and the lats so it almost created an illusion but I'd be so ripped and shredded that you know I was almost transparent um now that's not healthy that's not a healthy place to be but it was fit for purpose it was there to prove you know a point and to achieve a goal and I've achieved that goal um I have since come away from bodybuilding uh I've done a complete 180 after working some athletes locally in the world of triathlon so running and cycling um I've come into running and cycling I've only been running a cycle in a few months um so a complete 180 I'm down around somewhere between two to three stone compared to where I am normally at this time of year um yet my dry protein is pretty much the same I've lost a couple of kilograms um but you could argue that this might be through uh creating I'm not currently taking any creative and creating will hold water in the muscle so possibly given the illusion that um you know I've lost a little bit of dry protein but it this extra weight being top heavy is counterintuitive for a runner and counterintuitive as a cyclist um I don't want to lose all of my shape oh so I'm still training on the weights but instead of training six seven times a week sometimes I train twice a day you know I've dropped this down to two or three so maintaining but I'm a considerably a much smaller version of of the way I used to be which um I struggle with sometimes because you know I like being bigger um but again it's I've decided to adopt this to prove a point in in the world of triathlon and running and cycling and this may not sound like an awful lot to many people but I've I've barely done any running since I left school I've only been running and cycling a few months I've been on a bike less than 10 times in my life um and I've I've already managed to achieve a sub 19 5K uh run which is is pretty good um and my my power output on the bike is is fairly competitive and I don't know if you're familiar with Strava and um uh you know kom's King of the mountains or segments on Strava um I've actually managed to achieve um a few uh high scores basically Within These Kom so I'm the second fastest in the world on a few segments already around my local area out of you know six to seven thousand athletes locally um nice yes they're on shorter segments um and that's where my poet is coming from a bodybuilding background but um but the cycle is coming on but what's allowed me to adapt into this and evolve uh so quickly is the fact that I am ketogenic my body is in the metabolic state of ketosis and this is what I teach people for health well-being as well as working with with local athletes uh it almost seems to be the magic Elixir for absolutely everything it's worth certainly for me the clients I work with the athletes that I work with um you know most people come into this for the weight loss as I did but I've I've maintained this lifestyle um for the health benefits and I believe this is why you know you've gravitated into into removing all plants um and I have too uh I didn't start that way excuse me I I genuinely believed plants to be good for me in the early days I used to consume lots of them um but I have slowly gravitated into a carnivore based lifestyle through laziness it takes two minutes for me to fry a steak um I couldn't be bothered to cook the veg so I began not cooking veg um six months after not eating veg um I felt even better than I did being ketogenic and that's what led me into studying the vitamin and mineral profile within plants and meats and then it brought me down to the plant toxins the phytoelexins which has led me now to to remove plants from my diet and and now I am Carnival so this um that's the progression of my journey um apologies no no that was great man so hey guys just want to take a second to thank our sponsor at carnivore bar I don't promote many products because honestly all you need to be healthy is to just eat meat for those times that you're out hiking road tripping or stuck at work and you want nutritious snack that is just meat fat and salt if you want it the carnival bar is a great option so I like this product not because it's just pure meat but also because I want the carnivore Market to thrive as well and the more we support meat only products the more meat only products that will be available in the mainstream so if this sounds like something you'd like to get behind check it out using my discount code Anthony to get 10 off which also applies to subscriptions giving you 25 off total all right thanks guys well when did you when did you make that transition over to straight carnivore from keto um roughly four four five years ago possibly um but having said that it I wasn't what I would call strict Carnival I used to describe myself as being 95 carnivore um there are things that I would still consume um they were you know some of the the things that we make in stock you know on the website uh offerings if you like to the low carb community in order to bring them into a low carb ketogenics it's like I would eat you know keto cakes and keto bars occasionally I would still eat vegetables if I went out for food if we went out for a meal somewhere um and it came with vegetables then I would eat them uh but I've since moved away from that again um they just don't work for me uh you know it's like I almost tried to convince myself that a little bit is okay but I just felt absolutely awful after eating these vegetables that um yeah and beyond that the biggest the biggest one for me um which uh many may not even seem or believe to be you know uh full Carnival it's coffee obviously coffee you know it comes from a plant um I've removed that from my diet uh that was the hardest one for me um coffee it's a drug it's addictive uh it does make you feel good it supplies you with with fake energy it almost borrows from tomorrow it gives you energy today from tomorrow isn't it if it borrows this energy um but I also tried to convince myself that there were benefits to drinking the coffee um you know caffeine is a fat mobilizer um so I convinced myself that I needed it to lose weight but when you look at the other detrimental effects of drinking coffee and the equivalent of effect of acrylamide for example um acrylamide causes inflammation you know it's been known as it's known carcinogen um and for me it's not worth putting these things in but incremental changes there are things that we consume on a daily basis that we don't realize coming from plants and I know that sounds silly but uh I think a lot of people out there who are listening who are Carnival can probably attest to that but you it's not just a case of removing plants um almost everything is made from Plants isn't it everything that we buy in the supermarket um every you know these super greens you know that are outdone I cringe every time I see something for these super greens or plant-based protein um but that that's where that that's where the Junior's taking me and it's uh even to the point where I'm even careful in regards to what I put onto my skin um I only recently started looking into things that were that were found in cloth paste and hand cream and mouthwash um I've come to believe that if you can't eat it then it shouldn't go on your skin um and I've got this cream on my on my desk actually this is a tallow-based cream so this is uh it's just Tallow and this is what I use now as in regards to hand cream uh and I put it on on my lips and things um you know if my lips are Ever Dry uh which I suffer with in the cold weather but uh yeah it comes down to as deep as things like that the mouthwash toothpaste hand green so I'm even careful now in regards to what I put onto my skin so extreme or not you know it um these toxins are everywhere and I think we need to do everything that we can to defend against them um the last thing we want to be doing is is adding them um into our bodies or onto our bodies but uh that that's where I am that's my journey to date oh very cool yeah people will say of course they're like well it's not that big of a deal and um you know it's you know if it was you know they wouldn't be legal it wouldn't be around it's like well okay you know that that's an argument but there are plenty of things that have been around that have been orderly uh harmful to people and it wasn't it was only in later decades that they realized that and sort of took them off the market and some of them didn't ever come off the market and it doesn't mean that they're not you know harmful uh but there was a reason to keep them on the market or or no good reason to take them off the market and you know so you know people can make that decision if they're if they're convinced by it they can you know use baking soda for toothpaste and not use you know all these different sorts of products um and other people can can do whatever how they want you know that and that's fine that's that's up to them but you know when you when you try these different things and and you and you see for yourself that you're you're benefiting um that that's really what matters is people's experience and it doesn't matter what A study says it doesn't matter what somebody tells you is going to happen or isn't going to happen you know if you do something it makes your body feel better and you feel better for it and your health is getting better and your your biomarkers are getting better and everything's getting better objectively and subjectively why would you why would you do anything else you know it doesn't really matter what anyone says after that the only thing that I'd add there in regards to biomarkers and and blood tests and things is that um you know there are a few markers that we are told cholesterol being one of them you know we are told to be within a certain range um I believe that to be total rubbish cholesterol is essential for life is made every cell in the body is made of cholesterol it's essential for cell formation cell communication nuclear absorption neutral Transportation the production of hormones is essential for healing and this is why I believe that people suffer with thyroid issues uh later in life and it's because of a lack of saturated fats we deprive in the body of an essential nutrient um we should not be restricting cholesterol so when people say that you know is that a positive effect on my my lipid profile um you know we need to take that with a pinch of salt because my my cholesterol is double figures um my LDL is uh is eight and my my uh my overall cholesterol is 10 with the last test was 10.26 um which to a doctor is at a dangerous level yet I have zero calcification on my arterial wall um cholesterol is you know uh an interesting subject but it's one that's been completely demonized since the 1950s with studies done by Ansel keys and the Seven country study notably which wasn't the seven country study it was 21 countries that he studied uh and he was bribed a substantial amount of money to to remove the other 14 which disproved this Theory and this these are facts this isn't the conspiracy theory this has been documented numerous amount of times and this is where the whole fear of safety fats and cholesterol came from originally uh and it is still rampant in today's society a doctor will still tell you to avoid Saturday fat saturated fat is the healthiest fat for us saturated fat is essential for life our brains are made up of over 60 saturated fat the myelin sheaths which sends signals throughout the body is made up of cholesterol every cell in the body is made up of cholesterol um we should not be preventing the production of cholesterol and one thing there are lots of things that prevent us from producing cholesterol but plants prevent this from producing cholesterol in the in the form of plant sterols or phytal sterols um they prevent us from producing our own cholesterol uh and when we begin to understand how important that these things uh that the body creates and the work that they are doing uh we quickly quickly realize that plants uh are trying to stop those in their tracks uh in every way you know possible um cholesterol should not be feared uh if you are not consuming excess carbohydrates if you cannot consume in excess greens you were not damaging the glycocal explaining the arterial wall you were not causing glycation or oxidative stress to to LDL particles LDL is essential for life um LDL heals the body LDL repairs the body but it becomes damaged through glycation and oxidation to the Apple B100 receptor which um comes from excess carbohydrates and oxidation from seed oils converting them into pattern B LDL pattern a is healing and repairs the body and one of the studies that I that I speak about um covers over uh or something well over 90 000 participants um and uh it uh it looks at the relationship between high LDL and all cause mortality and the study shows an inverse Association representing 93 of the participants in other words the lower your LDL the higher your risk of death and I believe that this study didn't account for pattern a or pattern B so LDL is a central LDL heals the body LDL repairs the body we should not be fearing cholesterol and we should certainly shouldn't be taken medications that are stopped into production of cholesterol I.E statins statins block something called them a valinate pathway which prevents us from producing cholesterol and also it's one step before the body produces DNA so these these medications or tablets that preventing the body from creating DNA in there is no circumstance you know in the human body where we we do not want to be creating DNA these things are detrimental to our health um I work alongside a neurophysiologist um called Sarah Sarah is a neurophysiologist for Singleton hospital he's a lecturer for Swansea uni um big fan of yours I believe as well so she'll be over the moon that I've mentioned her today um she's she's going to be at the phc as well oh great um but Sarah came to to see me I was working with her husband who is a triathlete and she came to see me after suffering with diabetes for over 23 years um and this is an intelligent person this is someone who is highly recognized within the medical community um yet she was clinically obese and type 2 diabetic for 23 years um I'll send you a picture if you want to pop it up at some point with it within this but the the transformation is incredible the 12-month transformation was over seven Stone um reversed her diabetes Sarah could barely walk a mile and now she runs marathons in under four was um she recently completed yeah incredible she recently completed in a duathlon with me um and she won her age category and she beat a lot of other athletes who are in younger categories as well and all of this has come through changing her diet and lifestyle but I'd gone off for one again apologies but she works alongside um other doctors who work with patients with Alzheimer's and Dementia and Parkinson's and one of the things that the first things that they do is take patients off statins because statins have been known to contribute obviously we need cholesterol for the brain and to prevent the body from producing cholesterol as detrimental effects on the brain and other things too as you rightly said in in the the podcast that we did recently weak gym gluten has been known to travel up to Vegas nerve and cause newer disruption in the brain um these foods that come from plants are toxic to humans uh in in every way shape and form um I have not found any benefit personally to take in plants in my diet um I think plants are medication I think we can make medicines from Plants um and that to me I'm not against medication I've needed medication in my lifetime and I think there is a place for it but we don't take medication unless we are sick you don't take chemotherapy pills unless you have cancer um you know you so you shouldn't be taking these these other these other medications that are derived from Plants unless you run well so why would we eat plants on a daily basis um I've converted Sarah also to being carnivore my wife is Carnival um I have converted copious amounts of vegans into being Carnival um yeah the um I'm known as the vegan Slayer um and I have nothing against England or vegetarians I work with lots of them I I want you know I would not work with someone just because of their dietary choice but what I do try is I try to educate them um in the means of nutrition I'll show them the evidence and you know if um if they are happy to maintain their lifestyle I'm happy to work with them um but the truth of the matter is that animal proteins contain every victim in a mineral we need there are certain victims and minerals we cannot get from Plants you know there are not their argument is that well I'll supplement well why should you supplement when everything is in that egg everything is found within that piece of meat um you know I don't um I don't need to supplement with anything as far as vitamins and minerals go um but yeah apologies I've got no no not at all but we laid again yeah well I was just going to say um you know to your point earlier about statins being linked with Alzheimer's and Dementia there was um yeah I just saw some of the presentations at the metabolic Health Summit and low carb Denver you know last month um David Diamond was was presenting some some research and one of those was was exact was on exactly that where they they had there are certain statins that cross the blood-brain barrier and impede the brain's ability to make cholesterol which your body makes cholesterol it is essential and uh but it doesn't necessarily make as much as it as it needs because we do get this from our our diet and so we're used to that um getting it in but you have to make it you do make it as well because you have to have it sort of available at all times and they found that people that were on this Statin uh the Cross Blood brain variants stop the brain from from making cholesterol they were they were you know had had higher rates of Alzheimer's dementia and things like that and they found that if they took them off this Statin in six weeks they were basically normal and and then they put them back on the Statin and uh within you know another six weeks they they had Alzheimer's again quote unquote so that's not Alzheimer's they're maybe they're being poisoned I mean that's all there is to it you know you're taking a substance and it's harming your body's natural functioning that's the definition of being poisoned and so you're being poisoned and we can be poisoned by by medication and uh you know all medications you know I I always liked it one doctor I spoke to said you know drugs don't have side effects they just have effects and some of them you want some of them you don't want but they just have effects and this is what they do and so these these drugs have effects and one of those effects is to stop your body from from producing and utilizing cholesterol and that's thought to be beneficial but it is not necessarily and I would I would really argue that there may be few to know actual reasons to actually limit your cholesterol you know some of the the the thought that uh statins had any sort of benefit is it what benefit they have is minuscule if you've had a heart attack and you get put on a Statin that will increase your your life expectancy by five days five days Days right not years not months days and uh and if you haven't had a heart attack it's like three days okay so but it has all these other effects that you don't necessarily want and that that little tiny bit of an improvement it's thought is more likely from its anti-inflammatory effects sort of like aspirin wood yeah but all these people around aspirin anyway and so you know I think that that you know maybe a little higher dose of aspirin or just leaving it alone entirely is probably going to do them better and not have all of these other effects that are clearly causing harm and so yeah so there's a there's a ton of data and there's a ton of studies and and you know people can people can cherry pick whatever they want and they can say you know well you know that meta-analysis and this major study in the general American College of Cardiology you know I had you know with looking at all these different sources yeah yeah yeah well yes that showed that there's absolutely no correlation with saturated fat and cholesterol and an inverse relationship with stroke but you know there's always an excuse there's always an excuse with some of these people um so you know you can't help everyone but you can you can at least present this stuff and there's tons and tons and tons of data I think one of the more compelling studies that I've seen it was a real world study that looked at that looked at people with with uh heart attacks in the United States there are two studies like this there were and they all had about 140 000 participants in it and so big studies and they found that of these 140 000 heart attacks in a given you know time period year or whatever at these institutions that they had that that there was a dead even split on their cholesterol levels so 50 had so-called high cholesterol LDL cholesterol 50 had so-called low cholesterol or normal cholesterol and it was it wasn't there wasn't even you know a one percent in in the direction of heart disease so there was no relationship no relationship it was just completely unrelated right 140 000 people that's about as good as you're going to get uh for a medical study a big study and it's better than most and they one of the studies followed up the these patients after two years and they found that of course their doctors are saying well you got to get your cholesterol down even people with low cholesterol will keep it down or maybe get it down more and so the the group that kept the low cholesterol had low and kept low or had high cholesterol and then brought it low were two times as likely to have died before the two-year follow-up than those who had high cholesterol right so-called high cholesterol so that I is I think is uh is more compelling than well we have this associative study and we have these people and these people are sort of ate this and they said that they had two sandwiches with lettuce and this one said they had three and you know like who who cares I mean that that's a terrible terrible study this is real world these are real people that had real outcomes and actions and real life and death consequences to their actions and it showed something very very different and it shows something that a lot of other studies are showing as well which there is no association between LDL cholesterol and heart disease and in fact a lot of them are showing protective uh protective aspects even the Framingham study in the you know decades ago 40 years ago that was represented by the AHA as being as showing higher cholesterol equals higher heart disease that's what I was taught in medical school it's the opposite the actual study showed the opposite showed that lower cholesterol actually had worse outcomes deaths and cardiovascular illness and things like that and so that was exactly the opposite of what they of what they said it was and what got put into the medical textbooks which is insane because the study is just there for anyone to look at and and yet that one does and you and you teach this stuff in medical school based on the aha's interpretation of it as opposed to the actual study itself which is crazy to me and um you know and I went to to medical school in Europe you know so this isn't like like an American sort of thing that's just like you know corrupted the halls of American Academia I mean this was this was in Europe there's a Royal College of surgeon so like you know this this got everywhere it was pervasive you know and so you know uh there there was there's another study similar to the one you mentioned but with with tens of thousands of people I think there's over 60 000 patients over the age of 65 and they found that the people that had higher LDL cholesterol were protected from Alzheimer's Parkinson's and stroke uh had protective from cardiovascular disease um had had uh you know lower rates fall cause mortality and live longer stayed independent longer or less likely to go to a nursing home and you know that's that I mean who are we putting on statins it's generally people over the age of 65 maybe getting on their 40s but most people over the age of 65 are probably on a Statin I know a lot of people who said that yeah you know there's nothing wrong with my cholesterol according to my doctor but I said just because my age I should be on a Statin you know and and this study would show clearly that no especially because of your age you shouldn't be on a stand and uh so I think that this is something that that just absolutely has to get uh reworked uh in the in the medical literature who knows I mean it's it's the most profitable drug that has ever come on the market so I mean we'll see they don't want their their Cash Cow to get to get killed and that's exactly it isn't it it um it's financially driven unfortunately um study after study after study has shown uh over the years the cholesterol is protective and heals the body and there was another study that Ansel Keys was part of the Minnesota conradery experiment where the um they split the patients in six Mental Hospitals uh into two groups saturated fat group and a vegetable oil group in an attempt to lower cholesterol and it did the vegetable oil group did lower cholesterol but it also increased risk of death now this was um I believe this took place in something like 68 to 73. now he's only in 2016 with the results uh released because they were they were hidden um I think uh a member of of the family of one of the the participants within the trial um found the research and uh and media public but when they were asked why you know the research wasn't published is because uh it didn't fall into their hypothesis it didn't suit you know their belief that um uh lowering cholesterol uh would it would increase lifespan um which is borderline criminal because the reason that we do or perform these studies is to release this information and unfortunately cholesterol is I think the biggest tripping Point uh as far as health and well-being because if if we believe for a second that uh elevated cholesterol is bad for us then suddenly plants are good because plants lower cholesterol you know and so it all comes back to this you know it all comes back to cholesterol um but you know as we said cholesterol is a center of life it's not the cause of cardiovascular disease um and the reason that we believe that it is is because in athletic plaques the cholesterol is present but blaming cholesterol uh you know is um is this is uh like blaming the firefighter this is an analogy that gets thrown around quite a lot it um it's like blaming a firefighter for starting a fire because there's a firefighter at the site of every fire that firefighter is trying to put the damage out um but what happens with this LDL when it becomes damaged uh you know as we said earlier becomes glycated and oxidized um and it does soar through excess carbohydrate glycation particularly from grains and oxidation from things like seed oils um but it damages a receptacle the Apple B100 receptor every LDL particle has one and when it goes back to the liver it's this that the liver recognizes as as an access card so when this is damaged the liver basically denies their access with circulates in the blood um and then it comes across to a damaged arterial uh arterial wall that's been damaged through excess carbohydrate consumption because the glycocalyx is is the arterial walls first line of defense so once this is damaged it exposes the sub-endothelial space so this cholesterol will travel into the sublime space in order to heal and repair the body um but within the sub endothelial space there are macrophages cells called macrophages which uh they've got a receptor called a scavenger receptor the scavenger receptor recognizes this damaged Apple B100 receptor when the liver doesn't and it basically engulfs it and allows your access and it crams them in until this macrophone grows into a foam cell and the form cell is the start of an atherosclerotic plaque so it's not cholesterol per se cholesterol is there to try to heal the body but it's these damaged cholesterol particles which are caused through glycation and oxidation and again excess carbohydrate consumption um particularly from through the group I guess contributing factors these vegetable oils that we are told a good stress and a heart healthy so the grains that we're told are heart healthy and the vegetable oils that we told heart healthy are the two main contributing factors the cardiovascular disease um and this is why I removed them completely from my diet um start there's a study another study that I reference in the talks that I give which Compares saturated fat consumption olive oil consumption of vegetable oil consumption in a group of people who suffer with with heart disease and saturated fat came out on top and basically it showed that more people died from vegetable oil consumption less from olive oil but even less from saturated fats saturated fats are the healthiest fats for us and this is the one that I prioritize um I have nothing against things like extra virgin olive oil but I think um if you're going to add you know fats to your diet then they should be from saturated fat sources anything that's hard at room temperature I typically don't cook in in fats anymore um again I eat Foods in complex so I'll just use the fats from the meat you know that I'm cooking and but if I if I do add a fat then it is typically butter large ghee um anything hard at room temperature coconut oil occasionally but it's um um I tend to use you know the the beef dripping from um from other meats that I've cooked and I'll use that again and again um but yeah that's what uh that's what I do on a daily basis which um I love the fat on my on my food um to the point where I think a lot of people may even be grossed out by the amount of fat that you know it's um I I I um I had uh was it liver heart um Lamb's heart last night and um Lamb's heart you know it's quite fatty in places um oxtail probably fatty uh I love the fat you know on on these on these Foods um and again I don't prioritize the fat I just eat Foods in complex so as nature intended um as we know the awful is the most nutrient dense food on the planet particularly beef liver you know these meats these organ Meats contain every vitamin and mineral that we need not just to survive but Thrive but um um I love them and a good way to get them in if you don't like them uh is mince meat because your local butcher will mince up awful and put it into the mince meat mince meat is is stick it's it's just minced up red meat and that way you get a little bit of the awful in as well and it's a cheap way to get a quality nutrients in but um certainly don't fear your uh your red meat these studies that um that demonize red meat and cause in cancer again they've been disproven time and time again um and that's another big bug bear of mine that that's a question that I can ask quite often you know um what about red meat consumption is it going to cause cancer and things um time and time again these Studies have been ripped apart and despite having a title saying that red meat causes cancer there was one study in particular that the Paul Mason references um which contained over 800 studies basically not one of those studies actually showed any correlation at all um you know he breaks it down uh very well within you know I highly recommended to watch that one um but basically red week it is not the cause of cancer and in fact I would argue quite the opposite I think that um red meat is essential for combat in things like Cancers and tumors um you know as we know Cancers and human cells are metabolically inflexible uh they approval by glucose when you go to a carnivore you would restrict in your glucose consumption um and cancer cells tumor cells Cannot Be Free Will by ketones in most cases so it um you know we've worked successfully with two cancer patients uh both went through chemotherapy treatment which failed uh one decided to do um an animal-based diet or lifestyle to combat the other one did that but in conjunction with uh chemotherapy for round two but both reverse their cancers successfully um so make it that what you will but um yeah this uh this is certainly the way forward yeah and there's anyone that's not um you know it's not anecdotal evidence with the the the cancer there were hundreds of studies in humans at the moment with just showing a ketogenic metabolic therapy with various cancers tons of cancer there's two dozen just in glioblastomas randomized controlled trials things like that smaller studies in glioblastoma I think the RCT was about 20 participants but there are you know there are dozen right now going on trying to massively increase that uh that burden of proof in the in the literature and many many other cancers have been tried specifically at triple negative breast cancer which I as my understanding this is this is one of the most aggressive forms of breast cancer responds extraordinarily well to ketogenic metabolic therapy and you know you you understand why if you if you have studied cancer biology and it's just how these cancer cells work and how they they don't work which is specifically through oxidative phosphorylation they are unable to do it their mitochondria very damaged they have to go through substrate level thought um fermentation so it's in in the in the cytoplasm as opposed to in the in the mitochondria itself and so um they require four times 400 times the amount of glucose for normal functioning and they have a high metabolic rate of course and so you you restrict that and you're going to restrict their ability to grow and to live and these things just kind of die off you look at it at a tumor a big solid tumor generally the outside is the Living Part sort of like a like a tree you know you have like you count the Rings and just sort of going out and it's just like the living stuff on the outside and um the inside is generally like necross and dying so you see it on scans you see this weird sort of you know contrast enhancing outside and the inside's all just dead Mucky garbage and that's because they you know they sort of outgrow their blood supply that they have crappy blood supply um it's that's the thought so it's more metabolically active on the outside and you know that that can just happen like if so if you limit the amount of supplies you know they do this with with you know cauterizing and knocking off you know the blood supply to these things as well and that that can damage them but also just limiting the amount of available energy that's going to limit the amount that they can grow and if they if they have an energy demand um that exceeds their energy Supply this cell dies and um so you know it's quite simple in that regard there's more to it than that of course you know they can run on glutamine as well uh Global Stone is a bit more resistant to ketogenic metabolic therapy just because they they run predominantly on on glutamine they like 75 of their energy from glutamine and some of these other cancers are like that as well so it depends on it depends on which one but there are hundreds of studies in humans already and various cancers and showing you know different levels of success with different with different types of ketogenic diet I mean you know because you say ketogenic you're just saying limiting some some places will say well we'll limit less than 50 grams of Keto of carbs a day others say more less than 20 others say less than 10 others say absolutely not you're not touching this stuff uh as you go down that chain towards no carbs the outcomes Get Better by and large as you would expect if this was if this is you know what we know about cancer biology and so and then the animal models I mean there's I mean I don't even know how many hundreds or thousands there are for cancer and animals showing the ketogenic metabolic therapy helps so you know this is something that is already being used in major centers around the world I know the Char and Cross Hospital in the UK in London is doing that and Cedar Sinai Medical Center in the U.S one of the top top hospitals one of the two top hospitals going and and they've been using this stuff for I mean over a decade 15 years plus I think and they're doing human trials human studies on on more and more and more of this because they're just getting such good results and so they publish a lot of case reports case series smaller studies now they're doing larger and larger studies in humans so this is some is a very exciting uh time I think we're just right on the threshold of really cracking open you know the cancer treatment and and getting you know getting back control over this Beast that is basically out of control I mean cancer rates are tripled in the last 40 years and that is it is such a devastating illness even surviving it with the current standard standards of care is is devastating you can you can be crippled and permanently injured I mean some people make make it through uh minimally unscathed or recover from it anyway but but some don't make it at all some are uh succumb to the treatments unfortunately I had a friend of mine who had uh cancer and he's uh he's a good buddy of mine that played rugby with up in Seattle uh named Sid Cole and he uh he had he was put on a he was put on a chemotherapy agent I remember talking to him and and uh his it caused neurological damage to the point that he sort of had these sort of claw hands you could sort of want to use these fingers now and it's very difficult and he was trying to you know play touch rugby and do these sorts of things and it was just very hard for him to grab the ball and um that was that was the best chemo available for his type of cancer and that when it was working but he had such bad reactions to it just just bad you know effects from it that uh he just said look you know uh to his doctor he said look I'm I don't want to I don't want to be cancer just to be a and an invalid you know I I either beat this standing on my own two feet or or I don't want I don't want to and so they switched tracks to a second line therapy and you know he he was he was you know with us for another couple years but unfortunately you know he did he did pass away from it and um you know it's a it's an absolute devastating disease you know I see it pretty much every day in my work in neurosurgery and it's it's devastating having these extremely aggressive brain Cancers and people we have our our treatment for these things in recent decades has really not improved much it's maybe giving people a couple extra months if that you know in on average you know it's getting a little better in sort of inching along but it's not it's not uh the big massive you know here's the here's the answer sort of uh result that you would that you would want and hopefully these uh studies with with uh these different you know metabolic therapies that are very promising early on for a number of cancers this is just this this works we have good good good evidence that this just works and then you know I'm hoping for a glioblastoma as well we'll get more and more so we will get more and more studies they are being done right now but hopefully uh hopefully they turn out the way I expect them to and the way that the the evidence has you know has been pointing to already and and we can get this out there and more people can can get on board and and potentially avert a serious disaster that uh that they really don't want to deal with yeah yeah I agree yeah yes it uh well right away yeah so I was going to say um you know when we were when we were talking last time uh you know I was quite impressed with your your knowledge uh in detailed knowledge of the different plant toxins and how they work to damage our body uh in the first place you know we're talking about about even just broccoli and how this was you know and and what happened in the chemicals it released and everyone just says you know is this how can broccoli be bad for you how can that possibly be this is like the least offensive vegetable out there everyone eats broccoli everyone knows broccoli is good for you uh well I mean broccoli's not even a natural plant like it's not even you do you will not find broccoli in the wild this is not a wild plant um so you know if we're talking about eating naturally we're talking about eating something you know to do with our nature it's certainly not a plant that didn't exist all that long ago um can you can you go into some of the uh if you mentioned lectins and Seed oils and uh and obviously broccoli things like that can you go into some of the details of of your own research into this and into these different different wrinkles and toxins uh that made you first wary of and then and then decide to exclude plants from your diet so yeah I used to eat broccoli almost every day and I used to eat kale and spinach every day thinking that I was being healthy um but as I said I began restricting these Foods through through laziness and then that led me into research and initially the the victim in a mineral profile within these meats um because we're told that these fruits and vegetables are high in these vitamins and minerals but that's it's just not the case um what is actually in there isn't in human form anyway we need to convert a lot of them in into human form and they carry a low bioavailability but beyond that um led me down the path of of plant toxins fight all xins and there's hundreds of them um broccoli we are told is a superfood and we're told that it's a superfood because it contains a combo called sulfur pain um well in fact that that's that's a fallacy because it doesn't actually contain sulfur pain until the plant becomes under attack so sulfur pain is created within the plant during the chewing process so when the plant becomes under attack so the chewing process when my glucoraphilin binds to my Rawson is during the Turing process it creates this isothiocyanate called sulfur pain which is so deadly that it can't exist in a living plant um so it's created when the plant becomes under attack it's a defense chemical uh it's the same chemical that is used in the treatment for certain cancers um so this is why it's touted as being an anti-carcinogen eat your broccoli to fight off cancer but coming back to what we said earlier um why would you take a chemotherapy pill if you didn't have chemotherapy and it's the same effect when we consuming foods like broccoli um why would we consume something that contains this deadly toxins the plant itself can't contain until it becomes under attack um and we are eating this in abundance we're eating broccoli day in Day Out sulfur pain is toxic to the human body um do not consume broccoli and the same goes for things like the spinach and the kale I know we touched base on on the on the spinach and things like um a turmeric and again I know we mentioned that um I did a force recently on uh on turmeric and how turmeric is not your friend um now before I go into this I just want to reiterate the fact that it we live and teach people about these things but what I believe to be accurate now um isn't what I believed to be you know years ago um our beliefs changed through education um we learn new things as time goes on and um I believed that uh turmeric was good for me um I used to consume these uh you know these spinach smoothies and I used to put turmeric and black pepper and things in and um I make products one of the products that um that I used to make I still have stock of now is uh apple cider vinegar um I don't use the apple cider anymore as I say I've come away from from all of these sorts of things um and I won't produce it in the future but I I added compounds to this that I believed to be good for us and I added turmeric and cinnamon um the second that I found this research now this is where um people will say well you know you were wedded to be in ketogenic so you know you have to say that being ketogenic is is the best thing ever um and it's not the case if I learn something that is heavily evidence-based then I will gladly come out and say look I was incorrect uh and I was incorrect when it came to plants when it came to things like turmeric and Cocoon I released a post basically saying that these these things are toxins that are bad for us um despite having a product that I was selling that containers and I told people despite holding this product in stock um do not buy it so that's cost me money um you know if my agenda was the other way around um I would be telling people all the fairy tales around curcumin and turmeric and cinnamon um but these are not true so I warned people off by especially if they suffer with kidney issues or joint pain um or thyroid issues which is the vast majority of the population unfortunately um but yeah I discovered that that these things a detrimental to our health um you know turmeric curcumin um we are told that it's an antioxidant um but it isn't an antioxidant it's a pro-oxidant um it activates something called the Nrf2 pathway which is an oxidative stress pathway um so this is the same path through this activated with uh lead ingestion Mercury arsenic um so to believe that these foods that we consume have in any benefit then we must reside the fact that consuming lead or arsenic or Mercury is is a benefit to the body now what people say is that um these things have what's called a hermetic effect um so it's a case of consuming something bad that provides us with a positive outcome um and as we discussed previously there are two two different types we can have environmental homicis or molecular homies environmental homicis would be cold water therapy which I I believe in um the research behind that I think is quite solid um that does have that type of effect and I believe maybe wake training is is that sort of effect as well um whereas we put a stress on the body and the body heals and repairs and comes back stronger but when we do it through molecular uh means I.E through plants um I don't believe that to be the same so that this activation of the Nrf2 Pathways basically um increasing glutathione and this is what scientists are seeing is this elevation of glutathione and they're reading this as an antioxidant effect but glutathione has been elevated in order to excrete this toxin from the body through through phase two detoxification in the liver um so this um this toxin will conjugate to glucuronic acid to to expel it from the body um and what do we do or what do we told to do if we buy these things in supplement form uh they contain things like black pepper which block the enzyme which is responsible for excreting this from the body in phase two detoxification uh which is UDP glucuronas transfer is it blocks our body's ability to excrete the toxin we are why would you block something that the body is trying to excrete um and as a double kick in the teeth uh curcumin also affects phase one detoxification um so yeah so it blocks both phases basically this this this this toxin um these these uh cocoons and these toxins uh which are found in uh you know turmeric and and spinach basically uh increase oxalate buildup within the body oxalates can lead to kidney damage um joint and pain damage the the uh found in the thigh Mass um uh in in the breasts all over the body and basically uh I think one study that I reference in the talks um covers well over a hundred um patients who died from from thyroid issue uh and nearly 80 of these patients were found to have high levels of oxalates these oxalates uh like microscopic crystals uh which are like needles which build up in the kidney uh and over 75 percent of kidney stones are a result of calcium oxalate buildup um as I say this is these are things that damage thyroid function um so spinach is not your friend turmeric is not your friend spinach contains I believe around 750 milligrams of oxalates per 100 grams so in the UK we uh we pack these in 200 gram pouches which means they can they contain around about 1500 milligrams give or take five thousand milligrams of oxalate is has been enough to to kill people yes um so yeah so we nearly a third of this is found in spinach and I was one of these people that would add spinach to to my mixer my blender um I would put turmeric in some more oxalates and I would add black pepper in order to increase bioavailability um little did I know it was not increasing bioavailability as such it was decreasing the body's ability to detoxify this toxin from the body um at any time that um uh the we consume these toxins and the body is trying to excrete it that should tell it tell us everything that we need to know and as I said if if we are to believe that these these Foods carry these benefits then we also must believe that Arsenic and lead and mercury and all of these things are activated in this Nrf2 pathway are also um beneficial through hobbyists and we know that that they are not why would one be beneficial and the other not just because it comes from a plant it does not make sense um yeah and it goes on you know it yeah oh no I was just gonna make a quick comment before you go on you know it is funny to me that they say oh well this stimulates you know glutathione and I was like oh that must be good because that's anti-inflammatory not realizing that it in response to that to try to clear out the inflammation and the horrible thing that you're causing like why wouldn't you think about that you know and it's just like oh well you know the the flu virus uh that's really good because it stimulates your immune system so so that's really good you know you want your immune system activated it's just like no no it's responding to the flu virus idiot so you know like why why are you not understanding that so that that's a very good point that uh that I think that um is uh is very good to point out because you know not everyone not everyone uh will know that because you're just told this increa this this is anti-inflammatory and just people don't actually see the evidence of that yeah and and you know we also when we look into the research um you know some studies will show anti-inflammatory properties but more so actually it will show an increase in certain cytokines in the body um which are inflammatory markers uh I think we covered last time things like um flavonoids or isoflavones um which are found in in you know soy products in the form of janistine uh janistan currency and anthocyanin in berries um you know these isoflavones are digestive Inhibitors they block the absorption of vitamin C which causes a net uh reduction uh important neutralization they cause infertility in both men and women look low sperm count because they act as endocrine disruptors they block thyroid peroxidase which we need to make thyroid hormone uh by activating activating the 17 beta uh estradiol receptor increase in estrogen which has negative effects on both men and women can lead to hypothyroidism and women gain or masculine men and they also increase these inflammatory cytokines I think some of the ones we mentioned last time and we all do this at the time doing which was in diluted interloop in six interleukin-1 and tumor and of course is the fact that Alpha um cytokines are released as a response to uh inflammatory signaling within the body so in one part we we are seeing these papers which say they have anti-inflammatory benefits but then they're actually causing the increase in these inflammatory cycle kinds and others um these Foods cannot be beneficial if they are affecting uh hormones if they are infecting affecting the body's ability to to digest and absorb other nutrients um you know there can't be a benefit to these um you know another one that we touched base on I think was phytic acid because I always believe that nuts and seeds were really good for me um nuts and seeds are also high in lectins as well as phytic acid but phytic acid will block the absorption uh of zincayana magnesium um which are all essential you know zinc is essential for production testosterone in both men and women um Iron is essential for the production uh uh of energy or magnesium essential for the production of energy within muscle um all of these things are essential for life um and we can't live without them and one of the studies that I talk about when we speak about lectins of phytic acid show that um the absorption of zinc can be negated by as much as a hundred percent when we co-consume um I think it was oysters with uh with corn tortillas so basically the phytic acid within the quantity has blocked the absorption of zinc by 100 lactins also do the same so the lectins will bind uh to the enterocytes lining the gap on the microvilli line in the gut and they block they basically take up surface area so the microwave light line together like little fingers and this is how we absorb our nutrients the neutrons bind to these little fingers lying in the gut and these lactins will bind the microphone Villa on the entire side of the gut and they will reduce the surface area so if we are for example let's go back to the old bodybuilding diet or what you will probably fed you know as a rugby player which is like tuna and uh sorry uh chicken and and pasta the the lactins within that pasta are blocking the absorption of those other nutrients which is absolutely counterintuitive um and so a number of mechanisms they're going to lead to malnutrition so if the body isn't receiving signaling to say that it's eaten an adequate Meal which is high in these vitamins and minerals it's going to lead you to eating uh lectins also block a hormone called leptin which is a satiety hormone so when we consume Foods um leptin is released and it tells us that we're full um a lot of people can attest to this when it comes to nuts because nuts are high in phytic acid as well as lectins but they block leptin so when you go and have a handful of these nuts do you notice that within five minutes you're going back and you've had another handful and then another handful and that's because the lack is a block and left in the Block in a Barney's ability to tell us that we've eaten um and again that's something that I know you've mentioned that I've you know we mentioned in the talks that we do um on Thursday night and the talks that we do online uh is the detrimental effects that they have on the interior sites lying in the gut so these lectins will bind to the entire sites line of the gut and these enterocytes are one cell thick um the the job is to protect our insides against external toxins so a pretty big job for something that's so small but these lactins will come in they'll bind to the entire sites of the epitheater's line in the gut and they'll cause the release of a molecule called zonal and zonlin release will cause a gap in the tight Junction between these epithelial cells allowing undigested protein molecules to travel into the bloodstream where they shouldn't be the body will then create antibodies to fight them and then through a process called molecular mimicry the body will start attacking other proteins in the body that look the same this is autoimmune disease anyone you know who who suffers with an autoimmune issue comes from this intestinal permeability tester permeability is caused by the lactins in the food that we are consuming particularly from grains other things can affect the the the intestinal uh tractor or give us this intestinal permeability um uh casein is another thing in in products that we can consume uh and amongst others but grains seem to have the most detrimental impact um because grains are very high in lectins but what people don't understand is other foods are the plants contain lectins like the night sheds as well as containing uh toxic chemicals like solanine um you know the the um the night shades like uh Tomatoes bell peppers potatoes these are all high in lectins which is causing this intestinal permeability um which is absolutely detrimental to our house and this is why you know we um um we need to remove these plants from our diet and coming back to a point that you made during the podcast that we did as well another point that I that I highlight which is the main reason that people stall do Rin you know a ketogenic lifestyle and they'll begin their Journey they'll be consuming lots of fat not enough protein which is you know the first arrow that they make in but they consume in too many foods on a ketogenic life so they contain lactins because lectins will bind to insulin receptors and stigma in the body to store five times more fat than insulin does itself so to put that into perspective what I explain to people is um generally about health and well-being um not mentioning being ketogenic the two rules that I'll tell people to take away is take up the grains and remove the seed oils and the reason being is that um this weight gain um this lead into this instant resistance is not caloric it isn't to do with the volume of calories that people are eating energy needs to be accounted for and I use the term energy uh because the caloric model is highly flawed and not all cut calories are created equal the caloric model doesn't account for the effect of insulin doesn't account for the thermic effect of food and doesn't account for um ketogenesis um but particularly it doesn't account for this effect of of insulin um no insulin is a storing hormone and he wants to store fat the second instinct is elevated um it up regularly it's like 440 light bees which breaks the bonds on the glycerol backbone and signals the body to store fat you know while this insulin is elevated it also blocks an enzyme called hormone sensitive light beers which we need to break the bonds on the glycerol backbone again to put fatty acids into the bloodstream so if we are consuming cereal for example before hitting the gym and incense elevated then we're in fat storage mode and we are not it's biologically impossible to burn that fat while insulin is elevated as a society we become more insulin resistant uh you know the older that we get through this over consumption of of carbohydrates grains and Seed oils and Seed oils probably contributed to insulin resistance at a six percent higher margin than grains do um these seed oils are high in an oxidized omega-6 called an oleic acid which damages our liver and leads to further in slim resistance and it also signals the body at a cellular level to store fat Omega-3s do not do this and saturated fats do not do this these vegetable oils signal the body to store fat and what do we do as a society every week we could stick them in you know the grains the vegetable oils which are high in these lectins um and we're cooking them in these seed oils we are signaling the body to store fat we are causing this insulin resistance and inflammation continuously but um to pull that into perspective if you were to consume a bowl of muesli or cereal in the morning that contains 100 calories or eat a steak that contained 100 calories the lectins within that news these are storing five times more fat than that piece of steak is it's not the calories it's the effect on our hormones insulin and the effects these lactids on insulin receptors these foods are detrimental to our health and I thought early on that it was governed directly to to grains in particular but it isn't almost every every plant you can think of contains lectins animals contain lacklands as well but the lectins in in animal proteins do not seem to cause these issues in a way that um the plant lactins do these are carbohydrate binding proteins signal the body to store fat at a cellular level um so yeah these things detrimental to our health have I missed anything there no no no no that was very thorough yeah and I think you you I think you did already cover this um you know well enough but you know the argument is uh is is certainly hormesis it was like well it's hormetic in the amounts that we eat are these things harmful um and I think that you know even just the points about you know the 75 of the kidney stones or calcium oxalates and you know they damage thyroid uh you know even low levels of uh cyanide that you like you get from almonds if you eat a lot of almonds or if you know in the 500 million people that that rely on uh cassava root as their main source of of calories per day uh that has cyanide you can't get rid of all of it if you don't get if you don't treat it properly it'll kill you there's enough cyanide to kill you so oh in the in the in the amounts that we eat well yes yeah he goes if you eat it and you don't treat it properly you die and they say well we don't eat we don't eat if it's not you know treated properly yeah I know some do you know and that's the point they die you know that's the whole idea um and uh and so it's important to know about these things right you know and like five kidney beans can put you in the hospital if you don't cook them right that's on the who is saying that I'm not saying that and so you know that's that's clearly in the in the don't five kidney beans that's not many but then you cook it and whatever you know does that does that come down yes it absolutely does but that doesn't mean that it's not causing some harm that doesn't mean that it's completely benign or even just 100 beneficial and you know so these things do build up and they have problems they have more subtle problems that's why we have more subtle illnesses like you know after 20 30 years of this we develop diabetes or we develop Crohn's disease or we develop something else and that's what this is you're building up and you're building up and then finally you're reaching a threshold where you know the wheels are falling off and with cassava and different sorts of things or even low-grade exposure to cyanide can cause thyroid dysfunction and neurological impairment and so you know a lot most people have thyroid issues of some some form or another and uh you know even even quite young people I see a lot of people with thyroid dysfunction and you know it's and they don't really know why and you know they think they're eating a healthy diet they're not necessarily overweight but they're just horrible energy levels they don't feel great and you know you have this this sort of issue you know B12 as another one that people are chronically deprived of even some people that do eat meat they're not eating enough meat or they're eating up other things that interfere with its absorption and utilization uh you can get pernicious anemia you can get you can get Auto auto antibodies to the areas of your stomach that release intrinsic factor which binds which needs to bind B12 in order to absorb it and you know we because everyone in society is is chronically low B12 our reference ranges cover actual deficiency so we say well this is normal but it's actually you know 250 points below a deficiency where you can get neurological impairment um which is crazy because now we're just saying oh yeah no that's fine you're in the normal range but but people are like well I don't feel I don't feel normal I don't feel okay I feel like crap and and sure enough that's because you know they're actually in the deficiency it's just everyone is uh see or a lot of people are deficient and so we're just seeing this this trend downwards towards ill health and now we're just calling that normal it's a new normal well no it's not it's not normal and uh that's all at all you know and and it doesn't need to exist and so you know what would that would be sort of you know based on what you've said there my response to that idea of well in in the amounts that we eat fruits and vegetables whole fruits and vegetables you know how how can you say that these things are toxic in those levels yeah well I guess again it comes back to um we don't know um what amounts I know you and I spoke about this recently to me um you don't know at what volume of these talks it's difficult to gauge how much of a toxin you're consuming from from fruits and vegetables um and you hit the nail on the head uh I think in the last conversation we said you you may be better off taking the medication because at least we know exactly what we are consuming um but many of us don't understand how so if we were to to believe um the amount of oxalates that are found in these Foods um how could we actively measure and weigh them um it's difficult because we are told to eat five fruit and veg today there's a plush I think now for seven fruit and veggie um and when I tell people that this is uh I'd like to use the word conspiracy but it's almost um because things are only conspiracy proven to be true isn't it but the the food industry they're owned by the same companies as the pharmaceutical companies uh one set of companies makes us sick and their business partners offer us a pill in order to make us better it's the perfect business model and I completely um it's wrong isn't it on every level but when I say to people about vegetables because the government or the media will tell you to consume lots of these these fruits and veg what do you think is happening if you were consuming all of these vegetables on your plate um what are you not consuming you were not consuming an adequate amount of animal proteins you were reducing these animal proteins and then the little you do is being negated by these plant toxins these phytalexins they are blocking the absorption of these these nutrients within the small bit of protein that you are eating and circling back to what you just said about um vitamin B12 deficiency if you go to the doctor one of um the the maybe 12 that they could offer you is cyanocobalamin which uh comes cyanide um there's toxins coming in All Ships um if you have vitamin B12 deficiency more meat the only source of it in bit well in my opinion is is animal proteins animal proteins contain everything that we need not just not to survive but Thrive and that includes you know the vitamin A uniform of retinol B vitamins are very low in in animal proteins I know we mentioned this recently as well that um you know as I was growing up I was told to consume carrots to see in the dark for retinol uh for vitamin A carrots do not contain any vitamin A um carrots and and all plants contain beta-carotene which is a precursor that needs to be acted upon by an enzyme to convert it into the active form of retinol and this has decreased by 21 times in order to convert it um B vitamins super low in in Plants B1 B2 B3 paradoxin B6 B12 non-existent but it would be seven all of these are very low in in plants and found in abundance in animal proteins vitamin D does not exist in Plants we get that from the sunlight we get it from our animal proteins um an argument I quite often hear is Vitamin C but vitamin C also exists in in animal proteins um and the interesting thing with vitamin C is that it uh it competes to absorbs from a glucose so when we consume less carbohydrates the body absorbs more vitamin C um what else is there so things like creatine carnitine carnosine choline all of these things we can only get from from animal proteins and when you look at the vitamin mineral profile found in in animal proteins particularly red meat and organ Meats it contains every victim in a mineral that we need not to survive but thrive um these compounds in plants are they're not in human form they need to be converted even to the point where we look at excuse me nuts or seeds for Omega-3s because this is what a lot of uh vegetarians or vegans will say that they get their Omega-3s from um plants and seeds contain ala we need EPA and DHE epis um we need to convert ala into EPA and from Nets and seeds the body does it so inefficiently close to zero is converted and it's similar with with kale kale I used to eat in abundance because it's high in vitamin K it's not kale does not contain any vitamin kale contains vitamin K1 and we need Vitamin K2 and again we need to convert K1 into K2 when the body does it so unefficiently close to zero with converted um and to do this we almost borrow from other parts in the body and by that I mean if we look at vitamins and minerals from supplement form so let's look at Vitamin C or ascorbic acid ascorbic acid is not vitamin C ascorbic acid is one part of vitamin C so when you take this in in a supplement you're only getting one part I believe there's five or six parts to vitamin C um when we put this one part in we need to to to bring in other nutrients from from other parts of the body to create the vitamin C leaving us deficient in other areas um these multivitamins do not work so that's another argument that I will hear from vegans and vegetarians is that you know I'll supplement with my my multivitamins multivitamins fight for absorption second you put them into your system and they're almost doing this they're almost being um blocked because they are fighting for absorption whereas when you eat a piece of meat the vitamins and minerals are digested and absorbed at different points through the digestive system so we are receiving all of these vitamins and minerals and this is why animal proteins are 100 bioavailable um these supplements we see on the market are not true supplements another one is Cle is is imperative you know for life is found to meet uh conjugated linoleic acid um people will supplement with that but that is made from vegetable oil or seed oil which is high in this oxidized omega-6 so you cannot supplement with CLA in in your you know your your um your protein supplements or or CLA supplements um supplements do not work um foods work you know and it's as simple as that we need to take things back to basics but it um yeah it's it's a Minefield but when you look into this um I think it's safe to say that everything keeps coming back to animal proteins for every victim in a mineral that we need you know and as I say not just to survive but Thrive we need animal proteins in our diet I work with um I've worked with lots of vegans and vegetarians who suffered with um osteoporosis um or sarcopenia muscle wastage um who have been supplemented with calcium for years and years and years uh calcium cannot reverse osteoporosis it would it might slow down degradation but it will not reverse it but we can reverse off the process and through the consumption of protein um bone is mineralized protein we cannot create bone or build bone without protein and we need protein phosphate and calcium and for calcium to be absorbed into the bone there's a direct correlation between calcium and sodium and what are we told to do as a society reduce red meat and avoid taking uh you know a sodium avoid sodium or Diet sodium it again is essential um and it comes back to these five things that I mentioned you know uh in the podcast we did recently that you know we're told to avoid saturated fats uh because the cholesterol be told to write avoid red meat we're told to avoid sodium um and with instead we're told to either whole grains and consume seed oils this combination is um I was going to swear that I don't know if I would like to swear or non-usually on YouTube yeah I was going to let it Rip but it it basically creates this um Perfect Storm of events for ill health um but politely yeah so these are things that are essential and we get all of these nutrients from from our animal proteins and this is why I've gravitated into into being being Carnival um I I find it difficult sometimes when I work with uh vegans or vegetarians who um you can see uh ill um but they they notice an improvement early on and the reason they notice an improvement I believe is um healthy user by yes so basically these people are actively reducing uh you know processed foods they're more active you know they're in the gym or they're doing meditation and Performing yoga um they are healthier in spite of not because of um but this will pay later in life and and these people as they say suffer with osteoporosis arcopenia dementia Alzheimer's again because they're not consuming any of these essential nutrients that we need at um yeah it's uh it's an education piece it's a big education piece I think and um it's one that uh I think we'll get we're going to be pushing for a very years and years to come but uh there seems to be an awful lot of backlash especially from the medical community in regards to you know red meat consumption sodium consumption cholesterol um although and the phc is is proof of this that lots of doctors and nutritionists and nutrition experts all over the world are on board with this um the enlightened ones if you if you will um they understand the benefit of these foods and these are the doctors that I work with locally um you know some of these doctors will send patients to me for diabetes um and coming back to as you were saying about diabetes and these things being Progressive uh you know you could you could get tested for diabetes today and you could show negative because the test is testing blood glucose but insulin resistance is building up behind the scenes your pancreas is releasing more and more insulin which keeps this glucose in check is keeping blood glucose low so if you were testing blood glucose you may be seen not to have diabetes but behind the scenes this incident has been elevated until it becomes elevated to the point that it cannot increase anymore once it crosses that threshold blood glucose is now elevated but this began 10 to 15 years prior this it didn't just happen overnight this insulin resistance has been building up for 10 to 15 years and a sign of insulin resistance the biggest sign is this Central adiposity and any fat accumulation or the barely any overhand over your belt skin tags um you know it's dry skin these are all signs of insulin resistance and this I believe speaks to the majority of people that I see on the High Street but it can be reversed incredibly quickly if we if we were to adopt a low carb ketogenic carnivore type lifestyle today that insulin begins to correct itself overnight and we can reverse this in as little as we've we've worked with with clients who have reversed their diabetes in as little as two weeks once they were told they were going to be on medication for the rest of their life so it's these foods are there the the um you know we don't need medication everything that we need is found in the way that nature presents through through these animal proteins that we can consume while avoiding or heavily negating as much of the plant toxins as we can you know and I do find it difficult sometimes because carnivore may seem extreme to a lot of people so I do almost what I try to do is I try to encourage people to build their meals around their protein and by that what I mean is instead of looking at the eat well plate here in the UK which only has less than a quarter of the plate to be Pro I mean I try to explain to people to build their their plate up with three quarters of animal protein and if you do want veg then um you can uh you know you can add about a quarter of that in build around animal proteins yeah cool as simple as that yeah awesome man well that's perfect man and uh very well said uh well it was an absolute pleasure talking to you I I could absolutely uh keep going for forever I'm sure um where can people find you and uh and find your work and and support your stuff no worries so on Instagram we are keto Dash Pro um my personal one is uh keto athletic UK um I think I'll send this to you and you can pin it below if you want to but it's um we try to put educate educational pieces on both um I've got a newly started Facebook group uh called Keto a lot of thought went into that yeah that wasn't taken yet Jesus that had to have been taken already so yeah we have played in simple just kiddo and the website which is full of podcasts and interviews which will be launching the one that we did with yourself uh we'll be launching that this week that'll be available on the ketopro.com all one word um lots of other interviews and podcasts on there uh with the likes of benazadi and things that um I know you were on Ben's podcast recently loads of uh of educational pieces lots more about the effects of lectins and plant toxins and other things that we've discussed in a lot more detail on there all backed with clinical trials and research papers everything is referenced um as you say it's easy to say something during the podcast but you know that's what we do on these talks is back them up with the clinical trials and research papers so all of those can be found there um and it's as simple as that awesome so you can find us very good awesome well everyone go down check that out and uh if you haven't
